In-demand winemaker Émilien Boutillat reveals the compelling story behind Piper-Hiedsieck ’s environmental ethos – plus its surprising link to Marilyn Monroe, and Hollywood.

LMA: Tell us a bit about Piper-Heidsieck, and your role there?
Émilien Boutillat: Piper-Heidsieck was founded in 1785, and has built a reputation for bold and expressive Champagnes. Throughout its history, Piper-Heidsieck has combined tradition with innovation, always with a focus on crafting wines that are vibrant, elegant, and approachable.
Today, that philosophy also extends to sustainability, which is central to how we think about the future of Champagne. As the first Champagne house to achieve B-Corp certification, Piper-Heidsieck is deeply committed to responsible viticulture, environmental stewardship, and ensuring that future generations can continue to produce exceptional wines from this region.
As Chief Winemaker for Piper-Heidsieck, I oversee all aspects of winemaking — from vineyard management and harvest decisions, to blending, aging, and ensuring consistency across the house style.
LMA: What champagne style(s) does Piper-Heidsieck Champagne produce?
Émilien Boutillat: We craft a broad range of cuvées, including non-vintage Brut, rosé, vintage Champagnes, and Essentiel extra-brut collection, each shaped by freshness, structure, and complexity.
Pinot Noir plays a central role in many of the blends, bringing structure, length and character, while Chardonnay adds finesse and freshness, and Meunier contributes a lot of fruitiness, as well as the crispness and vibrant side of the fruit.
